Basil Pesto was our first recipe. We make the traditional one based around basil, garlic, parmigiano reggiano, olive oil, taking great care from where we source the leaves: in summer it's our friends from Living Soil Garden, while in winter some UK suppliers are able to keep the pot production running. Sicilian Pesto is a more warm tasting variant, made using the sweetest sun-dried tomatoes from Italy, and the best almonds. Often it turns out to be even more flexible than basil pesto. But there are plenty of other sauces to taste in our menu. Enjoy!

Lasagne
Lasagnas are a way of life in Bologna, a special meal to be eaten on Sunday or on particular occasions. They are made with layers of pasta, bechamel sauce, beef mince and cheese. But they are also a good container to veer off the beaten path and go a tad crazy. Our most classic variant is spinach and ricotta for vegetarians and the seasonal ones: mushroom+bacon and leek+squash in autumn, courgettes+pesto during the summer.

Focaccia
In Italy, especially in Liguria, when you are hungry you just pop into a roadside shop selling focaccias, choose your taste and eat it immediately while walking along the street. It's the original street food and is incredibly tasty despite being so simple. They come in different tastes: from the pizza Margherita with mozzarella, to onions, cherry tomatoes, red onions and tuna, potatoes. The hardest part is trying to resist eating them when they come steaming out of the oven. You can buy single pieces or order us whole tin of your preferred taste. They are good cold, but if you resist going home to heat them on a pan, it's better.
